Andalusian Artisan Cured Cheese

.

If there is a tasty and versatile ingredient for cooking, that is cheese. This centenary dairy product has accompanied man since the first steps of civilization; not only for its nutritional properties, but also for its unmistakable flavor.

.

After several conclusions throughout history, it can be stated that cheese was born in the Neolithic. This happened as a result of the domestication of the first animals, which were the goat and the sheep and, later, the cow. It arose completely naturally, although its origin was attributed by the Greeks to Aristeo, son of the god Apollo. According to Pindar (famous lyric poet of classical Greece), the Myrtle Nymphs taught him a series of useful arts and one of them would be how to clot milk to obtain cheese.

Today the market offers a wide range of cheeses of different colors, smells, flavors and textures available to lovers of this product.

.

At our artisan cheese factory in Fuentes de Andalucía (Seville) we elaborate, in a totally natural way, a variety of exceptional cheeses worthy of tasting.

The cheeses and their properties

.

cheeses properties

As mentioned above, and as numerous studies have shown, cheese contains multiple nutritional qualities. Its main nutritional values are the proteins and vitamins that it possesses.

.

First of all, we can start by saying that it is a main source of calcium. This mineral is essential for the health of our bones. By eating cheese, we unconsciously combat bone diseases such as osteoporosis. Another star component of cheese is all the amino acids necessary for the human body to function properly. In addition, it contains a large amount of folic acid, which makes it a highly recommended food for pregnant or breastfeeding women.

And the fact is that cheese contains a large amount of folic acid.

And cheese is a food that cannot be missing in our diet. We can consume it in all its possible forms, which are not few. Include it in your dessert or in your favorite salty snack, and even in your breakfast.

Eating cheese alone is not the only way to do it. You can also take it with other foods with which, perhaps, you never thought of combining it. We warn you that you will discover a whole new world the day you try it…

Cheese with bread combinations

Bread

.

Generally speaking, we can say that artisan breads cooked over a wood fire and artisan breads go perfectly with all types of cheeses. The toasted bread and crackers are good companions, especially for creamy cheeses, such as our SEMI-CURED cheeses. The more delicate the cheese, the whiter and less salty the bread should be. The more sugary ones go very well with blue cheeses and cooked cheeses (Gruyère, Emmental, etc). However, you can experiment with other types of bread.

.

.

Nuts

.

The nuts such as walnuts, almonds, pistachios, peanuts and hazelnuts. If they are lightly toasted and lightly salted, they will be a perfect complement to cured cheeses, such as our cured cheese ORO ANDALUZ.

.

.

Dried fruits

.

The dried fruits such as raisins, dried figs, dried apricots, dates, as they concentrate all their sweet flavor, combine with all types of cheeses, although especially with cured or fermented cheeses.

Try pears, apples, grapes, figs, red fruits, quince and some marmalade with cheeses either more tender, like our SEMI-CURED cheese, or older, like our MAESTRANZA cheese. You will be surprised by the wide range of flavors that open up when mixing sweet with intense or creamy flavors. There are a multitude of fruits that go well with cheese, try until you find your perfect combinations. Remember that not only grapes with cheese taste like a kiss.

Other interesting combinations

.

For less cured and blue cheeses, honey accompanies them really well, enhancing their flavor. Some raw and clean vegetables also enhance the flavors and excellent mixtures are produced together with carrots, radishes, peppers, cucumber or celery. In addition, you can mix cheeses with some fish: the creamiest ones with salmon, for example. And with wine, no longer because “they give it to you with cheese”, each cheese has its own type of wine, as happens with fish and meat. Try the fino or manzanilla with MAESTRANZA, a dry white with ORO ANDALUZ or a fruity with our SEMICURADO.

Already our master cheese maker offers you the possibility to accompany it directly with Extra Virgin Olive Oil, with Pimentón de la Vera, with Provençal herbs, with orégano and tomato and with pepper. Not to be missed. The most successful ideas as they enhance the flavor of our cheeses and facilitate the possible combinations with fruits, jams and quince.
