The Organic AOVE is recognised as a star product and we are very aware of this at La Verea Andaluza. We are proud to be awarded with certificates such as the one granted by laboratorios IndLab, approving that our oils are chemical free throughout their production, in addition to the organic certificate received by the Andalusian Committee of Organic Agriculture. So that you know as well as we do what quality level an oil like ours has, we begin this post with a brief introduction to the oil sector. Olive Oil Ranking: First position for Organic EVOO

According to the characteristics of the oil, both its production process and the properties of the final result, we find that there is a variation from one oil to another:

It comes from those olives of poorer quality and black in colour due to their advanced state of oxidation or maturity. The liquid obtained from these olives is known as lampante oil, referring to the oil that was used in the past for lamps. This is subjected to a chemical process by which it is refined or deodorised. In this way, all impurities unfit for human consumption are eliminated. The resulting product is an odourless, colourless and tasteless liquid. To this refined oil 10-15% virgin or extra virgin olive oil is added for its commercialisation. This gives it a greenish colour and some flavour. It is sold in shops as Olive Oil “Mild” or “0.4º“, if a small quantity has been added; or “Intense” or “1º“, if a larger quantity has been added.
Virgin Olive Oil

Olive juice extracted by mechanical procedures, such as centrifuging or pressing the olives, so as not to alter the nutritional properties of the fruit. It still has some defects in terms of smell and taste. Its acidity exceeds 0.8º, and can reach up to 2º.
Extra Virgin Olive Oil

Following the same procedure as the previous variety, this oil is extracted from higher quality olives and at the veraison stage. Thus, it achieves that characteristic bitterness in its flavour due to the high content of polyphenols. It is a pure juice and 100% natural with no defects, with an acidity less than or equal to 0.8º.
Organic Extra Virgin Olive Oil

And in first position we find this category of oil, the Ecological EVOO. This is an Extra Virgin Olive Oil that has not been subjected to chemical products at any time throughout its production, whether fertilisers, herbicides or pesticides. In this way, organic olive growing protects natural resources and biodiversity. As a result, a high quality EVOO is obtained, just like the conventional one, but with an added value, which is the environmental protection. Being 100% natural and thanks to the fact that it contains no chemicals, each of the aromas it releases can be appreciated, and it is also healthier than conventional AOVE.

Spain, number one in the production of Organic EVOO

Spain is in first position both in terms of surface area and olive oil production. It accounts for approximately 60% of European production and 45% of world production. This is stated by the Ministry of Agriculture, Fisheries and Food. It also claims 29.33% of Ecological EVOO production worldwide, of which 85% comes from Andalusia. The MAPA also points out that Spain is the world’s leading exporter of olive oil. However, the majority of Spanish production (50-60%)is taken up by refined olive oil together with virgin olive oil, despite the fact that it has hardly any nutritional qualities. Unfortunately, the little remaining space is occupied by the production of Extra Virgin Olive Oil, which is of the highest quality. From La Verea Andaluza we are still hopeful that more and more companies are using these organic processes. Moreover, we are happy to see with our own eyes that this is becoming a reality.
Our Organic EVOO of Arbosana variety

At La Verea Andaluza we produce OOOOVE Ecológico from aceitunas Arbosanas. These are a type of olive of small size, oval shape and slightly asymmetrical. It has an excellent yield for the production of quality olive oil. They are harvested in October, when they are still in veraison. This indicates that the olives have been harvested before their optimum ripening point, giving them the Premium or early harvest designation. In this way, we achieve a flavour in the AOVE with that characteristic bitter touch. Afterwards, we select them one by one by hand and extract the oil the same morning they are harvested to avoid any possible degradation of the fruit. The Arbosana Organic EVOO stands out for its fruity aroma, persistent in the mouth and resistant to oxidation thanks to its high content of polyphenols. It also combines sweet, bitter and spicy flavours of medium-high intensity. These nuances stand out even more when this oil is used in crude oil, for example, for salads, toasts and gazpachos. It is also ideal for use in repostería. This Arbosana Organic EVOO has very interesting properties, as it has 74% oleic acid. For those who consume it, it will make their health a treasure. We have a small family olive grove of Arbosana in La Campana (Seville), full of a wide variety of birds, which devour any insects that may attack our olives, and surrounded by aromatic plants such as rosemary, lavender and thyme, which also keep them away.
